Kit's Kitchen Creation: Veggie crunch chicken

Anyone who knows me, knows that I *LOVE* Pinterest. At times, I am obsessed. I found this recipe on their a few months back called "OMG Chicken". The recipe can be found here at The Enchanted Cook. The recipe was super good, and super easy. I shared the recipe with my mom, and she was obsessed with it too, passing it on to my uncle. (My uncle suggested we serve it INSTEAD of turkey on Thanksgiving Day. Which is ALRIGHT by me).
   Basically, you just smear sour cream/mayo/ or yogurt on top of one side, cover with bread crumbs, back and Viola...OMG chicken.

As great as the recipe is in original form, I love to play around and experiment. I am still teaching myself to cook, and learn new recipes, but often I like to try variations of recipes I already love.
   In this version, I swapped the sour cream for veggie cream cheese. As the cream cheese didn't spread as easy as the mayo, I scooped a big spoonful in a bowl, softened it in the microwave and heated for about 15 seconds, I mixed in a bit of Adobe seasoning (my roommate got me hooked) some cilantro and smeared it on the chicken. Next, I crushed up some tomato basil wheat thins and used that in place of the bread crumbs.
  As I was cooking for one, (only one chicken breast) I only baked it for 25 minutes at 425. It comes out so delicious and juicy!

It would have been better, had I added some potato or vegetable on the side, but when I get home from work at 9 pm, I am often not in the mood to cook an elaborate meal.


Spotted: A Gaunt Matthew McConaughey

Today while perusing the NY Daily News, I came across this gem.
Matthew McConaughey was spotted looking extremely gaunt at LAX.

The actor apparently dropped 30 pounds for a role as an AIDS patient in the upcoming film The Dallas Buyers Club.

Props on taking his artistry seriously. However, he looks horrid. Not just because he's skinny, but that hair and mustache aren't working for me either!

He looked great in The Wedding Planner or How to Lose a Guy in 10 Days, but often he looks like he needs a bath!

Stay entertained during Hurricane Sandy! Watch Par-City's Performance at Santos!

Anyone on the East Coast, is probably stuck inside somewhere. If you are reading this, I will assume you have power or smart phone access. If cabin fever is starting to set in and you need something to entertain you for a bit, check out Par-City's latest performance.

R&B singer and actress Baiyu attended the Kim Kardashian hosted Second Annual Hosted Midori Green Halloween Party. The songstress revealed her “dark side” clad in a little black dress and red devil horns.
Hostess Kim Kardashian  as a golden-haired mermaid. Guests, who included Kim’s boo Kanye West, Lala Anthony, Carla DiBello, Joyce Bonelli, and Michael Silva were treated to specialty Midori cocktails including the Mermaid Fishbowl, while enjoying the music provided by DJ Kiss. A Smoking Elixir Bar, a mummy dance tribute to Michael Jackson’s “Thriller” and a spooky photo booth featuring goblins jumping out all helped to make the event spook-tacular.

Has Golden Dawn come to Astoria?



Astoria Officials are worried about Golden Dawn after several reports that the group was spotted in the neighborhood. Over the past month, posters for and against the group have been appearing in the streets of Astoria, and group members have been trying to enlist local merchants.

Golden Dawn is a Nationalist "Neo Nazi" party in Greece. The group is known for being Anti-immigration and Anti-semitic. The group's leader, Nikolaos Michaloliakos, has praised Hitler as a great man.

   Members of the party have been sited in Astoria, a notably Greek neighborhood. Members of the Golden Dawn had approached merchants in the community asking for donations to help the people of Greece, without identifying themselves as members of the group.

 Merchants say, they only learned that they were with Golden Dawn after the members came back days later with Golden Dawn NYC T-shirts for those who had donated. In an article in the New York Times, a cafe owner in Astoria tells of a Golden Dawn member leaving his cards in his cafe, all of which have been taken by the end of the week.

The Stop Golden Dawn Coalition has been established to oppose the group. Nicholas Levi, a member of Occupy Astoria Long Island City has also joined the opposing coalition, comparing Golden Dawn to the Nazi party in The Daily News.

The Daily News also reported that members of the group have been making appearances at meetings for a Greek Student Group at Queens College.

There is concern that the group has set up office in Astoria, the NYT reports, but that has yet to be confirmed.

Presidents are scary Characters!

Wins what exactly? Why the Presidential Race at Nationals Park, duh.

The events feature people in "president customs" running an actual race. These people aren't just wearing a suit, or funny hair piece, or even a George W. halloween mask but full-on Mickey Mouse-esq costume.

This year, "Teddy Roosevelt" won after 500+ attempts.

Am I the only one who had no idea that such a race even existed? 
 After doing some reading on Wiki, I learned that the race is held by Baseball Team the Washington Nationals. The race is held at every home game and features period garb, and large carciture heads made of foam.

I must say that this is one of the scariest looking characters I've ever seen.

Scandal: Is Forever 21 Pinching Pennies?


Retail outlet Forever 21 has had their share of law suits over the years. Numerous fashion designers have sued the company for copyright infringement over the years, as the brand is known for creating knock offs of high-end designs.
However, the recent lawsuit is a tad different. As reported by JustLuxe.com and The Daily Business Review (as posted on Thelaw.com,) the company is being sued by a customer who says the company is scamming customers a penny at a time.
Lawyer Caroline Kellman claims that she bought a pair of shorts from the retailer on May 12 for $14.46, but when she went to return the shorts, the company shorted her a penny, returning only $14.45. But the same thing had happened to her in the past. She was shorted a penny the previous July when she only received $11.56 for a skirt she returned that cost $11.57.
Kellman believes the company is engaging in what she calls a “Penny Pinching Scheme.”
As crazy as this sounds, it could turn out to be a major lawsuit!

The lawsuit, which accuses the retailer of a "penny-skimming scheme," seeks class-action status for two groups — anyone who has been charged 1 cent more and anyone refunded 1 cent less by Forever 21 in the past five years. The $15,000 threshold for civil actions in Miami-Dade Circuit Court translates to 1.5 million pennies, or at least 750,000 customers making and returning purchases since 2007.
So is the outlet up to no-good, or is this a crazy waste of time?

Music Monday: Sullee J Voice of the People

Here's a thought provoking new music video from Sullee J out of Baltimore. I video opens with Charlie Chaplin's final speech from The Dictator.  In between we see clips of Sullee rapping, and talking to children about what they want to be when they grow up.

Ladies: Men in Make-up, cool or a NO GO?

I  just submitted an article for CherryonTop.com about a report about men increasingly shopping for grooming supplies and cosmetic.

While I can appreciate a guy taking pride in his appearance, I could never get a with a dude, who had as many beauty products as I do. If I wanted to be with a woman, I would be a lesbian! 

I don't want to see a man with hair as long as mine. I don't think I could ever be with a guy who wore tinted moisturizer, owned clay face masks or who put on concealer. 

I know I might sound closed minded, but it is what is. If men want to wear concealer and broner, fine. They have the right to do so. I just find it to too girly for me. 

Ladies, what are your thoughts on men in make-up?
Last year Bronx Rap Group teamed up with Baltimore Rapper Sullee J on "Hard Times" featuring PreZZure. The song was part of Par-City's #FeatureFridays Series and also part of their Civilized Session Vol. 1.

This time around GiF of Par-City dropped a verse on Sullee J's latest track "W.T.F. (Where's the Faith)."

Dope Cover: Baiyu Covers Demi Lovato Give Your Heart Your A Break


I am so excited that Baiyu is back to doing covers again!! She used to do them all the time, and she took a break for a minute. Don't get my wrong, I *LOVE* her original music, but she puts new spins on good songs (and more than once I found myself loving her version of a song I previously hated!)

Here, Baiyu is covering Demi Lavato's "Give Your Heart a Break." Baiyu seems to have slowed the tempo down a tad (or maybe I'm used to a different version, as KTU is THE ONLY thing I hear at work). This was the first time I was actually able to understand most of the lyrics!

#Internships: Friend or Foe?

@Ed2010 recently interviewed Diana Wang, the former Harper's Bazaar Intern who is now suing the company. Wang claims that by having her perform" dangerous work" unpaid.

Now she has gotten a lot of flack, with many bashers pointing out that she knew the position was unpaid when she accepted it. And that internships are meant to help you gain experience. 

However, if they have interns doing meaningless free-labor activities, is it worth it?

As I was broke and paying for college and NYC life, I wasn't able to have an unpaid internship as a Freshman. And I certainly couldn't afford to PAY $500+ to work over the summer!
Luckily, when I finally did get my internships, I was lucky enough to get 1 that paid (Thanks ABC Daytime) and while the ones that followed were unpaid, I was given real work to do.

While my internships were beneficial, I think the intern situation should be reexamined. I don't think people should have to PAY to work.

Students who have internships over the summer shouldn't have to pay the university money for credit. They should be able to use their summer internship as a fall credit (if they are taking between 12-18 credits ) in the fall. It is disgusting that Universities profit off their students unpaid work.

I also agree that internships should be for a set time, and have a set goal. I also think think that if an internship will often require more than 40 hours per week, that should be CLEARLY communicated in the job post. Further, they should be required to give something to interns logging 40+ hours (free metro, car service, lunch, SOMETHING)

Also, companies shouldn't be allowed to make their interns do "entry level work" this isn't only unfair to the intern but entry level candidates as well. Entry level jobs are practically non-existent. Look at the average job posting Entry Level/ Assistant ____ jobs often require AT LEAST one year of experience (often with a note that they mean real work experience and NOT internships) with some requiring 5 years.

Riiiiiiiiight. Because people really are going to SPEND 5 years in the same position, and leave it ...for the same position somewhere else for the same (or less!) pay? Yeah, right.

While I believe that the  internship system needs a reboot, I don't think the whole concept should be put to an end. We all need to pay our dues, but the dues should at least have the POTENTIAL to lead to something. It should not be all manual labor/ and gofer tasks without offering and marketable skills and experience for the resume.

50 Shades of Lame: comments on #Fifty Shades of Grey

So like every other chick on the planet, I have read Fifty Shades of Grey.It makes sense that it started off as X-rated Twilight fan fiction. I can see the parallels between the two. While yes, the "plot" of FSOG was different, the writing style was similar. Long winded, and to quote Lorali and Rory Gilmore "repeative and redundant."

Unlike everyone else, I neither LOVED it nor hated it. Like Twilight, I felt annoyed by it, but still felt the need to finish it. 
Things that IRKED me about FSOG:
1. The excessive use of "holy" as an exclamation/expletive. "Holy Shit" "Holy F___" "Holy Moses" etc
2. I know it was supposed to be a sexy book, but damn, they ALWAYS were f**king. I mean damn, even those ED drug ads say "if erection doesn't go down after four hours see a doctor" sounds like homeboy should have headed to the ER.
3. How she kept calling him "Mr Grey"  and Sir and he kept calling her "Miss Steele" 
4. More than once in the book, Christian is chastising Ana about her eating habits as he doesn't think she eats enough. When asking her if she is hungry she says "Not for food" this stomach churning line appears rdo more than once. 
5. Why do girls want to date CG? I mean u can find a guy who will give you rough sex and not be a weirdo duche bag.

There were many other annoyances in the book-including its length. 500 pages? 100 would have been MORE than enough.
I have to finish the series though, my noisiness wont let me quit now.

The Random Things K wanted to be when she Grew Up

Top Ten Random (mostly unrealistic) Careers Kristin Dreamed of as a kid! (TV influenced many of these!)

Kindergarten Teacher
My Grandmother was a kindergarten teacher, and without bias I can say she was one of the best. No really, she was. I visited her class before I was old enough to attend Kindergarten myself. She would sing songs, teach the kids fun games, read interesting stories, and teach her kids. I remember, she was reading the class a story about Martin Luther King, and she even taught us a song about him. I couldn't wait to start school. Sadly, my teacher didn't teach us any songs about Martin Luther King, or teach us anything all. But my grandma made teaching seem so fun, I wanted to do it too!

Broadcast Journalist

As a child, I was given A Dress and Dazzle  dress up kit. Complete with bright pink microphone. Now, while this was most likely intended to be used to be be a pop star (which I also pretended to be) I also played TV Reporter.

At that time, I was obsessed with Diane Smith and Ann Nyberg,reporters from Action News 8, New Haven (They later changed it the name to something lame like News Channel 8, but they will also be Action News to me). As Channel 8, was at that time the channel of choice for both my mom and grandma, I was obsessed. I would take that fuchsia microphone and pretend I was on the scene at some big news event, usually a fire, and would end every report with "Back to you Diane."
I even got to see my hero  Diane Smith up close during the sailfest fireworks at the Sub-base, and BONUS! Her husband was right behind us! I was so excited, I though she was one of the biggest celebs ever! And her husband was RIGHT there. My uncle told him I was a huge fan, and he hardly responded. I'm sure he was thinking, "What 6 year old idolizes a news anchor? Weirdo" and uh, he'd be right, I am a weirdo.

Alas, in 5th grade, I was required to be on air for our student produced news morning show "News at 9" and I CHOKED! I made a complete fool of myself, to the point that I cringe thinking about. That was when my broadcast news dream died.


Ice Capades Performer
 When I was about this age, I went to the Ice Capades to see Disney on Ice. This was very trendy in those days. I even came home with a trendy Minnie Mouse doll clad in metallic silver and Gold (Oh, early 90s). After seeing this, I thought: I want to be in the Ice Capades!
Yes, after having gone ice skating all of three times, (and not well either) I was shooting straight for the pros!
Thankful, once I passed age 7, I came to realize that NO ONE would pay me to ice skate. They might however pay to never go near a pair of ice skates.

Actress
I dreamed of acting and playing Liezel in Sound of Music, Dorothy in Wizard of OZ, and Cinderella in Cinderella (Disney version!) or one of the evil sisters/step mom on stage. I didn't really want to act in the general sense, I just wanted to sing "I am 16" and "Somewhere Over the Rainbow" to a room of adoring fans.

Magazine Writer
I dreamed of writing silly personality quizes for YM and Cosmogirls and articles on how to tell "Does your Crush Secretly Love You." Later, I dreamed of interviewing Jay-Z and Limp Bizkit for Rolling Stone and Vibe.

Dance School Teacher
Like Ice skater, my three year old self was ready to turn dance into a career after three classes!


Janet Jackson's Back-Up Dancer
As a die hard Janet fan (Though her current behavior has disgusted me...) who had at this point had three mediocre years of dance under my belt, I began to dream of the big league. The fact that the latest dance routine my class had performed for the dance recital Rolly Polly the Polar Bear featured a Janetesqe move not unlike one she did in the  Rhythm Nation Video, made me sure I was a shoe in.
Please note: I wanted to be JANET'S back-up dancer, not Madonna, Not some random one named pop star who would be forgotten about in two seconds. JANET. I had STANDARDS.

Cook Show Host
I used to love cook show as a child (GEEK!) and would play in my play kitchen and pretend I was on TV. In fact, during my first trip to Florida, I insisted on jacking everyone's parsley garnishes at the restaurant, and used it to make a parsley soup for my play cooking show. My family members possess a very embarrassing video of said cooking show.

A Chemist
Anyone who knows me in REAL LIFE is thinking "Say what?"
I am horrible at math, and all through middle school/high school and college I was confused or bored in science class. However, as a young child, I dreamed of being a chemist. I saw teenagers  on HS dramedys doing chemistry, and to me, it looked like mixing colored water together. FUN. Mom  burst my bubble when she told me it involved a lot of math!

A Painter
I often woke up at ungodly hours as a child by choice. During those early mornings...tv selection was few and far between. BOB Ross was one of those options. Bob was so calm, and tranquil. I loved watching him mix colors (I think that was my favorite part) and when he painted, he made it look so easy! I would try to use his tricks with my water colors and tit never came out right!

Maybe there are things to look forward to AFTER age 27

My goal for my 27th year of life is to see as many broadway shows as possible (on the cheap of course, I'm NOT made of money. Earlier this month, I went to see Anything Goes. It was a great show. However, an article I read in the Playbill that I got from the show was even more interesting. 

The theater magazine did a piece on actress Estelle Parsons. If you are an 80s & 90s sitcom fan like I am, you may recognize her as the obnoxious and overbearing mother to Roseanne and Jackie on Roseanne. 

In the article, I learned that she is (or was at the time of the article) performing in Nice Work if You Can Get It.  At 84, she still is passionate about what she does, and has a desire to keep going. Rather than planning for retirement and a life of doing nothing, Parsons is planning her next project.

I found this fluff piece inspiring. To still be driven at an advanced age, and to have your drive stem from more then just a love of money and material things, but to to stem from a passion for what you do. 

It also reminded me that I could start my career tomorrow and by the time I am her age, I'd have been in it for nearly 60 years! While the thought of working in the same job or field for 60+ years is daunting it does put things in perspective a bit.

I guess we often focus so much on what people accomplished before age 25, before age 30 etc, that we forget that for many of life does go on after thirty. And their so many potential accomplishments and personal successes in the future.

Kim Kardashian is involved in ANOTHER lawsuit. This time, it involves Sketchers shape-ups. The federal government has proved that the shoes do NOTHING to strengthen a person's legs, ass etc.

Kimmy Kardash and her sisters were sued earlier this year over quick trim diet. 

Seriously, did people really think they get a sexy, toned body from a pair of shoes? Yes, wearing hills will make you look taller and leaner, giving the APPEARANCE of a better body. But a better body comes with diet and exercise.

Bottom Line: You can't believe Kimmy K
& The public are idiots.

Disclaimer: No, I don't diet or exercise,but I have accepted that I will be chubby but happy due to my love of comfort foods and being comfortable (with "being comfortable" meaning being a bum who avoids the gym like the plague).  I do not encourage others to follow my anti-regimen.

This latest article by The Huntington Post is not really news, as we have all known this for sometime, but is depressing. Basically, there list of best jobs for college grads. and they are computers and health care. I mean, lets be honest,even if I had majored in one of those things, I wouldn't have done well. Hell, I probably would have flunked out of school. Sometimes, I wish I had been born to crazy controlling and strict parents who gave me no choice but to get straight A's and be a Paris Geller (Gilmore Girls) kind of student. We all know Paris Geller didn't grow up to fold towels or run a register.

Happy New Year!

The new year marks a fresh start! Will 2012 bring new opportunities or will it be more of the same old same old?
